THE PERFECT SUMMER SALAD: GRILLED CHICKEN + BROCCOLI + ROASTED ALMOND + QUINOA

It feels like summer in San Diego today (81 blissful degrees)… So I thought I would whip up a salad that reminded me of backyard summer barbecues. This one is a take on traditional broccoli salad + grilled chicken and quinoa salad. Definitely a new week night fave. Filling and quick to make; with all of my favorite ingredients, roasted almonds, quinoa, grilled chicken and broccoli.


Servings: 2 + Serving Size: 2.5 cups

Grilled Chicken Ingredients:

  • 1 lb organic chicken tenders
  • 1 tbsp avocado oil (any oil works)
  • salt + pepper to taste
  • cumin 1 tsp
  • dash of cayenne pepper
  • onion salt 1/2 tsp
  • thyme 1/2 tsp
  • paprika 1/2 tsp

Salad

  • ~4 cups Spring Mix
  • 1/2 red onion; chopped
  • 1 cup quinoa
  • 2 cups broccoli
  • 1/4 cup crumbled goat cheese

Dressing

  • ~2 tbsp mayo
  • 1 tsp sugar
  • 2 tsp lemon juice
  • 1 tbsp white wine vinegar
  • 1 tsp balsamic vinegar
  • salt + pepper to taste

Toasted Almonds

  • 1/3 cup chopped almonds
  • 1 tbsp Sunflower seed oil (any oil works)
  • salt + pepper to taste

Directions:

1. Season + toss chicken tenders in oil and seasonings (thicker coat is better)

2. Light grill on medium-high heat + place tenders on grill. Cook each side for ~12 min. Until charred.

3. Start boiling water for quinoa + follow packet directions.

4. In large salad bowl combine spring mix, broccoli and chopped red onion.

5. Dressing: In small bowl combine mayo, sugar, lemon juice, white wine vinegar, balsamic vinegar, salt and pepper. Whisk until smooth.

6. Almonds: In a small pan, heat sunflower seed oil on med-high heat until sizzling. Add in chopped almonds and sprinkle with salt + pepper. Simmer for ~5-6 min. (Caution; these actually toast pretty fast!)

7. Combine dressing and toasted almonds with spring mix/ broccoli/ red onion + toss. Squeeze lemon wedge across the mixture.

8. Add grilled chicken and quinoa; top with goat cheese. Toss.

That is all! I enjoyed my salad with a chilled sauvignon blanc and some Van Morrison pandora radio.
